Roasted Cauliflower and Potato

Ingredients

  • 2 medium potatoes cut in small cubes

  • 1 cup cauliflower florets

  • 1 tablespoon olive oil

  • Salt pepper and paprika

  • Flour tortillas

  • Hummus

  • Baby spinach, tomatoes and chopped cucumbers

Directions

  • Mix cauliflower, potatoes, oil, salt, pepper and paprika.

  • Roast the mixture in 400-degree oven for 20 minutes or until nice and brown.

  • Spread Hummus on tortilla

  • Add spinach leaves, cauli/potato mixture, spinach, tomatoes and cucumbers or any vegetable of your choice.

  • Wrap the tortillas around the vegetables for a quick lunch or dinner.
