Roasted Cauliflower and Potato
Ingredients
2 medium potatoes cut in small cubes
1 cup cauliflower florets
1 tablespoon olive oil
Salt pepper and paprika
Flour tortillas
Hummus
Baby spinach, tomatoes and chopped cucumbers
Directions
Mix cauliflower, potatoes, oil, salt, pepper and paprika.
Roast the mixture in 400-degree oven for 20 minutes or until nice and brown.
Spread Hummus on tortilla
Add spinach leaves, cauli/potato mixture, spinach, tomatoes and cucumbers or any vegetable of your choice.
Wrap the tortillas around the vegetables for a quick lunch or dinner.
