Creamy Spinach Hummus

Ingredients

  • 1 tablespoon olive oil

  • 1 can cooked chickpeas

  • 1 small yellow onion

  • 1 cup baby spinach

  • 1 ripe avocado

  • 1 tablespoon lemon juice

  • 1/4the cup tahini

  • ½ teaspoon each salt, pepper, cumin and coriander powder

Directions

  • Sauté onion in olive oil until golden brown.

  • Add chickpeas and bring to boil.

  • Simmer for 10 minutes and add baby spinach.

  • Mix and set aside to cool. In a food processor, add chickpea mixture and the remaining ingredients.

  • Blend until smooth and creamy.
