Creamy Spinach Hummus
Ingredients
1 tablespoon olive oil
1 can cooked chickpeas
1 small yellow onion
1 cup baby spinach
1 ripe avocado
1 tablespoon lemon juice
1/4the cup tahini
½ teaspoon each salt, pepper, cumin and coriander powder
Directions
Sauté onion in olive oil until golden brown.
Add chickpeas and bring to boil.
Simmer for 10 minutes and add baby spinach.
Mix and set aside to cool. In a food processor, add chickpea mixture and the remaining ingredients.
Blend until smooth and creamy.
